For dinner tonight, Delaney had asked for chicken parmesan. It's not a particularly difficult meal to make but it does require more time than just popping something in the microwave. While Delaney was at her piano lesson, Macy and I went to Fresh Market to get the necessary ingredients. Mainly the chicken. Over the past few years, I've come to appreciate good quality chicken.
This recipe, in particular, benefits from quality chicken as it requires the breasts to be pounded flat. Tough chicken is the pits when it comes to pounding it. This, however, was so tender, Macy was able to pound it appropriately. It was the first time Macy had ever done it and she was so pleased with herself. The next step was dipping the chicken in the egg whites then the bread crumbs. Macy tried really hard to help with that but it required a more experienced hand to avoid a nasty mess so I had her butter the bread instead. Then she "made" the salad. We timed it just right. As KC and Delaney walked through the door, we had only a few minutes left on the timer.
The girls set the table and a few minutes later we all sat down at the table and enjoyed a fine family dinner. Days like this are pretty good.
