This is for my foodie friends. KC has been out of town all week. At the beginning of the week I asked the girls what they'd like for dinner. Macy chose meatloaf which I made on Monday; a day when I do not work and I'm still relatively spry and the girls are around to help with clean up. No big deal. Delaney chose Sun Dried Tomato and Goat Cheese Chicken. Since the only other day of the week both girls are home is Thursday, I just decided to make it on Thursday. I neglected a few things when I devised that plan:
1) I work on Thursdays. I had no time to go to the store to pick up the stuff I'd need and no time to do any prep work during the day!
2) It's Thursday. I'm dragging by the time I get to Thursday on weeks when KC is around. What made me think I'd be full of energy in a week when he's NOT around?
3) This meal isn't terribly difficult but it produces a mess of bowls and dishes during prep.
4) While the girls are around to help with clean up, they usually have a ton of homework on Thursdays.
Therefore, while it was tasty, it left the kitchen in a giant mess.
I'd also like to mention that today was the day that Macy pitched a fit. She slammed and kicked her door to demonstrate her displeasure with a decision I had made so I had to drop everything mid dinner prep, find a hammer and a screw driver and take her door off it's hinges. Yeah, she wasn't too happy about that one. Here's the proof that I did what I said I would do. I did learn something very valuable with this experience: if you are going to remove the hinge pins from a door, start at the bottom. If you start at the top, by the time you get to the bottom, they are nearly impossible to get out. I had to have Delaney hold the door up since it was hanging off to the side. I guess we all learned something this evening!
